BBQ Tofu on Baby Spinach and Quinoa


My bf threatened to order-in, but I promised I could whip up something fast and delicious within a half hour- and I did!
I lightly fried the tofu on both sides and then I poured a home-made bbq sauce (super easy to do!) on top, and that did its thing while the quinoa steamed. I put the hot tofu on top of the spinach so that the spinach lightly wilted. Yum yum!

Often, we don't need more than 30 min to prepare such a great meal. It's just a matter of taking a second to think you're going to like the homemade better than the ordered...

Your BBQ sauce looks amazing! The picture reminds me of a chinese dish that uses sweet and sour sauce over pineapples and pork and stuff--but I take tofu over pork any day!

I LOVE barbecue tofu! I knew a chef once who listened to my recipe for it and then named it "ghetto-fu." Awesome!
