My bf threatened to order-in, but I promised I could whip up something fast and delicious within a half hour- and I did! I lightly fried the tofu on both sides and then I poured a home-made bbq sauce (super easy to do!) on top, and that did its thing while the quinoa steamed. I put the hot tofu on top of the spinach so that the spinach lightly wilted. Yum yum!
