This is the Carrot-Cranberry-Walnut Salad with Creamy Walnut Vinaigrette from Vegan Soul Kitchen. It includes toasted walnut oil, which is a new favourite flavouring of mine. This is for my lunch tomorrow, but I tried a few bites of it and it tastes awesome - sort of sweet and sour with a nice mix of textures.

This sounds like a very nice lunch! Vegan Soul Kitchen is one of the few vegan recipe books I don't have and I can't justify buying any more at the moment, so I'll buy that oil and try to wing it...
That looks like a really satisfying salad! I love lots of the sauces/dressings from VSK, great book!
I love the colors and it must be super crunchy. My husband is into texture. Luckily, I have this cookbbok. Hope to try it one day.
