My sister and I went to the market today and we got some great fresh local veggies so we made an amazing pizza! It was even better than it looks!
crust: cornmeal + whole wheat
topping: tomato+red pepper sauce homemade pesto: fresh basil, walnuts, garlic, olive oil, salt zucchini and peppers marinated for a half hour in a vinaigrette of olive oil, apple cider vinegar and garlic
These pancakes are my version of the Oat-Corn Pancakes in Vegetarian Planet.
1 cup oat flour (grind oats in coffee grinder)
1 cup cornmeal
1 tsp salt
1/4 tsp baking soda
2 cups soymilk with 1 tbs white vinegar added to make "buttermilk"
This is millet cooked in half orange juice/half water, with fresh pitted cherries (amazing find at the grocery store this week!) and raw walnut halves on top.
This pizza was inspired by this cauliflower sauce recipe from the fabulous Fat Free Vegan Kitchen blog. Pizza is: Crust: made with 2 cups flour, 1 cup cornmeal tomato sauce
cauliflower layer: chopped cauliflower, chopped carrot, chopped onion simmered in a bit of water, and then I blended it up with: nutritional yeast, salt, italian spices and a scoop of vegan sour cream I had made earlier
topped with onion and olives
It was great!! I love the cornmeal in the crust. Adds something.
