Slow-cooked Beets and Seitan with Red Wine Sauce


It's a rainy Saturday so I felt like making something fancy, by which I mean something with red wine. The beets are the Three-Orange Beets from Fresh from the Vegetarian Slow Cooker, a very favourite cookbook of mine, and they are cooked in orange juice with a touch of marmalade.

The seitan is a basic recipe, simmered and sliced, and the sauce is the Red Wine Roux from Veganomicon. I can't believe I had never made this sauce, it is delicious!!

Slow-Cooker Chili with Cornbread


Saturday was chili night! The chili was based on the 'Sweet Potato Chili with Chipotle' (or something like that) from Fresh From the Vegetarian Slow Cooker (I added black beans and tvp crumbles), the cornbread is 'Skillet Corn Bread' from Veganomicon, and the sour cream is Tofutii brand. It was as good as it looked!!

Beans Bourguignon + Spinach and Mushroom Pasta


This one doesn't look that impressive, but it was really delicious. It is Beans Bouguinon from Fresh from the Vegetarian Slow Cooker.


A quich lunch: fried sliced mushrooms and wilted baby spinach on pasta with some leftover nacho sauce.

Braised Seitan with Red Wine and Mushrooms ..and a sundae


This recipe was perfect!! It is on page 131 of Fresh from the Vegetarian Slow Cooker. Gluten-meat, mushrooms, red wine, slow cooked for hours.. can't go wrong. I will definitely make this again.

And for dessert..


a sundae made of Soy Delicious chocolate ice cream, canned peaches, chocolate sauce, dried cranberries and candied peanuts.
