Orange-Sesame Tofu Stir-fry

I made the orange-sesame tofu recipe from Eat, Drink and Be Vegan and then I cooked it with some frozen "asian blend" vegetables and then I added some toasted sesame seeds and a bit more tamari. I served it on short grain brown rice.

Seitan Piccata with Green Beans

From Veganomicon. Seitan (wheat gluten "meat"), white wine, capers, shallots, garlic, olives etc. Will definitely make again.

Pumpkin Cinnamon Rolls

I used the recipe from here, but I used spelt flour instead of white wheat. I thought that this switch might make them a little dry, but they are moist and perfect! Must be the pumpkin. I also used raw sugar in the glaze instead of white icing sugar.

Beans Bourguignon + Spinach and Mushroom Pasta

This one doesn't look that impressive, but it was really delicious. It is Beans Bouguinon from Fresh from the Vegetarian Slow Cooker.

A quich lunch: fried sliced mushrooms and wilted baby spinach on pasta with some leftover nacho sauce.

Lazy Cabbage Rolls

I threw the following into the slow cooker and it did its thing while I was in Canadian Jewish Writers class: chopped cabbage, 1 big can puréed tomatoes, 1/3 cup sugar, 1/4 cup vinegar, salt, pepper.

When I got home I threw some tvp chunks and sliced dried mushroom into the pot to re-hydrate, and I made some short grain brown rice.

Just like cabbage rolls.. but so much easier!
